Honey Banana-Berry Cupcake

Yesterday, it's all about love in the day i celebrate two and half years anniversary with my boyfriend. So i decided to make cupcakes, actually i haven't make it before so this is my first time to learn. I name it Hanna-Barbera cupcake because everytime i said honey banana-berry, it sounds like Hanna-Barbera :P

1 banana, or as needed
1/2 eggs
50 gr white sugar

  • 20 ml vegetable oil
  • 0.6 ml vanilla extract
  • 0.2 g lemon zest
  • 45 g all-purpose flour
  • 2 g baking powder
  • 0.4 g salt
  • strawberry jam

  • 45 g cream cheese, softened
  • 7 g butter, softened
  • 15 g confectioners sugar
  • 0.6 ml vanilla extract
  • strawberry jam to taste 

how to:

  1. Preheat oven to 165 ÂșC.
  2. Place banana into a blender, and blend until smooth, set the puree aside.
  3. In a large bowl, beat together the eggs, white sugar, vegetable oil, 0,6 ml vanilla extract, lemon zest, and strawberry puree until well combined. Stir in the flour, baking powder, salt. Spoon the batter into the prepared cupcake cups, filling each about 2/3 full and given little by little strawberry jam.
  4. Bake in the preheated oven until the cupcakes have risen and a toothpick inserted into the center of a cupcake comes out clean, about 23 minutes. Allow the cupcakes to cool at least 10 minutes before frosting.
  5. To make frosting, beat cream cheese and butter together in a mixing bowl with an electric mixer until smooth, and mix in confectioners sugar and 0,6 ml teaspoon vanilla extract to make a lump-free icing. Frost each cupcake with about 2 tablespoons of icing, and top each cupcake with a strawberry slice.

and if you ask how was it, the texture poorly failed because sodden cake but the taste was great, only the texture is an unfortunate. Please be advised this is the first time i made a cupcake. ;)
